The Caramel Overload Brownie was so good, my 21-year-old son didn't know it was low carb when he "stole" one! I made the cake-like version and the texture was light and tasted like real flour. My only complaint is that you have to add unsweetened chocolate squares to the mix, which adds to the cost and I don't always have them on hand. But the results are worth it! I'm a diabetic and even eating 1/8 of the batch (9x13 pan) at once didn't bother my BGL at all.

I use cocoa in my Dixie Diner Brownies. Just use 3 Tablespoons of cocoa for each ounce of chocolate....so 6 Tablespoons in all. I use about half a stick of butter instead of a whole one and then add 1/4 cup of light sour cream, the eggs, and Hood calorie countdown 2% milk instead of the cream because that is what I have on hand. Turns out great. I find that many low carb dishes call for too much butter and I always use less. Low carb and a bit less fat so less overall calories.
