They don't rise. They come out about the same size as they go in. So they sorta come out like cookies, but they do taste really good. I tried the carrot one which is only 1 carb per muffin.

I was very pleasantly surprised at how good these were. I tried two of them, the Coconut and the Cinnamon Struesel. They were both very good, but I had to freeze them so I wouldn't eat too many!
