Italian Zucchini and
Tomatoes

3 cups sliced zucchini -- slice
or dice
1 cup stewed tomatoes -- canned
2 cloves garlic -- minced
2 tablespoons olive oil
1/2 teaspoon onion powder
1/2 teaspoon salt and pepper -- each
1 teaspoon dried italian seasoning
1/2 cup grated parmesan cheese
Preheat oven to 350f and spray
a casserole with cooking spray. (Note:
this part can be done in the microwave).
Heat oil in a large skillet and add garlic. Cook until fragratn,
then
add in zucchini. Stir fry for 3 minutes or until the zucchini
just starts to
wilt. Add in the tomatoes and seasonings. Pour into prepared
pan and and
bake, uncovered, 15 minutes.(Or microwave for 5-7 minutes)
Sprinkle parmesan on top and bake an additional 7-10 moinutes
or until
cheese melts(or microwave another 3-4). I typically get about
6 servings of this as a small side. Excellent
with grilled chicken breast and salad:)
