Green Beans with Hot
Dressing

1 pound green beans
4 slices bacon
2 tablespoons butter -- or bacon grease
1/4 cup red wine vinegar
1 tablespoon artificial sweetener
salt and pepper -- to taste
2 tablespoons fresh parsley -- chopped
Boil or steam the green beans
until they are tender but still firm. Drain and set aside.
Fry the bacon until crisp and drain on paper towels. Crumble
the bacon into small pieces and set aside.
Melt the butter or bacon drippings in a small saucepan over moderate
heat.
Add the vinegar, sugar sub, salt, and pepper and bring to a simmer.
Add the bacon to the sauce and pour over the green beans while
still hot.
Sprinkle with chopped parsley. Serves 4 to 6.
