Cauliflower Blues

1 Head Cauliflower
1/2 cup Bob's Blue Cheese Salad Dressing (Found in the Deli Case)
1 cup grated cheddar cheese
salt and pepper -- to taste

Heat oven ot 350

Cook Cauliflower until tender. (I cooked it in a covered pot on the stove
with a little water.) Drain cauliflower very well. Set on paper towels if
necessary. Place cauliflower in a bowl and mash with a fork or beat with a
mixer. Leaving lumps and bumps for texture. Add Blue Cheese Dressing and
mix. Add Cheddar Cheese and mix. Take a taste and add Salt and Pepper if
you think it needs it. Place mixture in a baking dish and place in oven for
about 20 min or until the top browns. Cut into squares and serve as a side.

**This is a recipe I converted from my twice baked potatos. I have to tell
you this one is just as good, only missing the potato skin. If you have
any variations of this basic recipe, please send it my way!!**
