Bacon Stuffed Mushrooms

2 pounds fresh mushrooms -- cleaned
and stems reserved
8 slices bacon
1/2 yellow onion -- minced
stems from mushrooms -- chopped
12 ounces cream cheese -- softened
1 cup grated cheddar cheese
In medium sized skillet saute
bacon until brown; drain and crumble. Drain grease but do not
rinse pan.
Add minced onion and chopped mushroom stems to pan. Cook all
together until tender.
Add cream cheese to mixture and cook until melted. Stuff mushroom
caps with mixture and
cover with grated cheese. Bake at 350 on a lightly greased cookie
sheet for 15 minutes.
