Cajun Pumpkin Seeds

1 pound pumpkin seeds, dried
(I get an organic chinese variety from my
health food store)
2 Teaspoons butter
2 Tablespoons cajun spice mix
1 Dash hot sauce
1 Dash Black pepper

Preheat oven to 375 degrees.

Melt the butter and add the spices, mix well. Into a bowl add the spice mix to the seeds and stir well so all the seeds are coated. Spread the seeds into a layer on a large cookie sheet and put them into the oven. Seeds will puff up (and some will pop, you'll hear them) as they roast, be sure to stir them around so they roast evenly.

Awesome and easy! Great snack for when you want something crunchy.
