Mini Cheese Balls

16 ounces sharp cheddar cheese -- grated
8 ounces cream cheese -- room temp
2 ounces blue cheese, crumbled
2 ounces heavy cream
1 teaspoon worcestershire sauce
1/2 teaspoon tabasco sauce
2 tablespoons dried parsley
1/2 cup chopped almonds -- chopped fine

This is a very basic cheese ball recipe.
Put everything except the almonds into a food processor and pulse to blend into a paste. Refrigerate until firm, then - with damp hands - pinch off a piece and roll into balls. I get about 36 the size of a very large marble. You may get more or less depending on how big you make them. Roll in the crushed almonds or topping of your choice(spices, fresh parsley, etc can be used instead of almonds). Almond count is not included in totals because it's an optional ingredient.

36 mini balls
