Cheese Dip

2 tablespoons olive oil
1 pound shredded cheddar cheese
1 cup sour cream
1 egg -- beaten
1 teaspoon dry mustard
1 teaspoon paprika
Put oil in top of double boiler
with cheese. Simmer over hot water till cheese begins to melt.
Add
cream slowly, stirring all the time till cheese is all melted
and the mixture is smooth. Stir in the
egg and spices. Serve warm with fresh veggies of your choice
for dipping
