Chicken Liver Pate

1 pint chicken livers -- fresh
3 tablespoons butter
hot sauce -- to taste
salt and pepper -- to taste
1 package cream cheese -- (8 ounce)

Heat skillet on Medium - Medium high and melt butter. Add chicken
livers and saute till cooked through and nicely browned. Towards the end of
the cooking, add hot sauce, salt and pepper - more can be added later.

Add chicken livers (cooled slightly) into food processor and add the
cream cheese. Process till nice and smooth. Taste and adjust seasonging as
needed. Put into container and refridgerate till chilled.

This makes a great spread with pork rinds. And sometimes I
make little balls of pate and roll them in crushed pork rind crumbs for
bite sized snacks.
