Chef Osny's Cheese Soufle

100 grams Gorgonzola cheese -- Blue or Roquefort cheese
125 grams cream cheese
100 grams swiss cheese
1/2 cup heavy cream
2 egg whites
2 egg yolks

In a bowl mix the cheeses untill tender, add the egg yolks and the
heavy cream and mix all together.Beat very well the whites untill hard
and mix them very gently and carefully with the rest of the ingredients,
except a small amount of the whites.
Spray 3 china or glass small recipient for individual portions or a
bigger( 6 inches). Poor the mixture in the recipients carefully, mix
the small amount of whites reserved with a little bit of the mixture and
with a spoon gently spread all over. Pre heat the oven to 350 degree
and bake it for 30 minutes or until brown. Never open the oven during this time!
Serve immediatly with green salad.
