Brandy Sauce

1 cup water
1 tablespoon guar gum
2 tablespoons butter
1/2 cup splenda -- (or isomalt -if using isomalt, deduct 12g
carbs from the total)
1 teaspoon nutmeg
1/4 cup brandy
1 teaspoon vanilla
Mix splenda, gum and nutmeg together.
Bring water to a boil and whisk in the
dry ingredients -whisk well. Let simmer until thickened slightly,
then add
the remaining ingredients. Great over low-carb vanilla icecream
or on l/c cakes:)
