Aubergine Pizza (Eggplant)

Serves 2 as a main meal, with a green salad.
Set the oven to 200c.
Slice one Aubergine into 4-6 long slices, sprinkle the slices
with low-salt and set aside.
Meanwhile prepare your toppings, I like tuna or sardines, but
ham or chicken is good too, Mozzerela and fresh parmesan cheese,
teaspoon of low carb tomato sauce, dried chillies, fresh torn
herbs, chopped mushrooms etc.....(any usual low-carb pizza
topping).
Blot the aubergine on some kitchen paper, drizzel with some
garlicky olive oil, stack your toppings on top, and bake for
about 15-20 minutes...I promise these are great!
