Creamy Seafood Soup

2 tablespoons butter -- divided
1/2 pound shrimp -- peeled and deveined
1/2 pound scallops
1 onion -- chopped
2 stalks celery -- sliced
1 tablespoon fresh thyme
1 red pepper -- chopped
3 cups heavy cream
1/4 cup sherry
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/8 teaspoon nutmeg
1 sprig thyme -- optional
In large skillet, melt 1 tblsp.
butter. Add shrimp and scallops; cook until
just opaque; remove. In same skillet melt remaining 1 tblsp.
butter over
medium heat. Add onion, celery and thyme; cook until tender,
8-10 min. Add
bell pepper; cook until crisp-tender, 5 min. Add cream, sherry
salt cayenne pepper, nutmeg and 1 cup of
water. Bring to a boil. Add shrimp and scallops; heat through.
Garnish
with thyme sprig if desired.
