My Mothers Meatball
Veggie Soup

1 pound ground beef
1/2 pound ground pork
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
3 tablespoons oil
1 can green beans -- drained well
1 small turnip -- peeled and diced small
1/2 cup diced onion
3 stalks celery -- sliced chunky
1 cup shredded cabbage
1 can Ro-tel tomatoes w/green chilis (mild is
good)
4 cans beef broth
3 cans water
Preheat oven to 400f.
Spray a broiler type pan with cooking spray.
Make meatballs by mixing: beef, pork, salt, pepper and garlic
powder
well. Form into about 40 bite-sized meatballs. Place in a single
layer on
broiler rack pan and bake for 20 minutes or until cooked through.
In a large pot, heat oil and add in turnips, celery and onion.
Sautee
for about 5 minutes, then add in remaining ingredients except
cabbage.
Let simmer over low heat, covered, for 30 minutes, then add in
cabage
and cook 15 more minutes.
Serve piping hot. Tastes even better the 2nd day:)
