Gumbo

1/2 Cup Chopped Celery
1/2 Cup chopped scallion -- tops
1/2 Stick butter
2 Bay Leaves
2 tablespoons Garlic Powder
2 tablespoons Onion Powder
Seasoning Salt or Old Bay Seasoning to taste
4 Cups Chicken Broth
1 Cup Crabmeat
1 Cup fish -- boneless, chopped
1 Cup chicken -- chopped, optional
1/2 Cup beef broth -- optional
1 Cup beef -- optional
1 Cup crawfish -- tails, shelled
1 pound shrimp -- (1 to 2) cleaned and deveined
2 cups okra -- chopped
In a large saucepan, melt the butter over medium heat saute chopped
vegetables until transparent. Add stock, okra and seasonings bring
to a rapid boil add your choice of seafood and meat, bring to a boil
and simmer for approximately 3 minutes. Serve immediately. I try to
use seasonings without carbs, and dehydrated seasoning vegetables.
If you use these omit the saute and just add everything in a large
pot and bring to a boil. Simmer for 5 minutes. Precook chicken and
beef save the broth. Servings: 8-10
