Cheesy Vegetable Soup

2 pounds frozen cauliflower, broccoli, carrot
3 cans chicken broth
1 can rotel tomatoes and green chili's Mild -- (8 oz)
1 8 oz velvetta cheese
Combine frozen veges, rotel, and chicken broth. Bring to a boil and
reduce heat. Cook until vegetables are soft. Remove from heat and
mash vegetables to desired texture. Add velvetta cheese, stir til
melted.
I have made this and added some shredded cooked chicken breasts to
add some meat. It was very good this way also.
