Cream of Shrimp Soup

1/2 cup onion -- chopped
1/2 cup celery -- sliced
1 cup turnip -- peeled and chopped
1/4 cup butter
1/4 cup soy flour -- or protein powder
1 cup cream
2 cups water
2 cups chicken broth -- canned is fine
1 1/2 pounds shrimp -- peeled and deveined
1 each salt and pepper -- to taste
Saute onion, turnip and celery
in butter for 5 minutes or until they
start to get tender. Stir in soy flour very well and let cook
about 1 minute.
Stir in water, making sure to dissolve flour, and let simmer
10 minutes or until
turnips are getting tender. Stir in cream, broth and shrimp.
Let simmer about 8-10 minutes or until
shrimp are fully cooked. Serve steaming hot with a little shaved
parmesan and protein bread
croutons floating on top.
