Cream of Broccoli Soup
Recipe By :Karen R
Categories : Soups
1 bunch broccoli -- (4 stalks)
4 cups homemade turkey stock
1 cup heavy cream
1 stick butter
1 cup water
3 tablespoons NotStarch (from www.expertfoods.com)
Garlic powder, salt, pepper, -- salt, pepper,
marjoram, onion powder, green tobasco -
Peel the broccoli stalks and
slice thinly. Boil the broccoli stalks and tops
in the stock till tender. (Substitute canned, bullion, whatever,
if need
be). Reserve stalks and some tops. Puree the remainder in batches
in the blender
and return to pan along with chopped tops and stalks (for texture
-
optional). Melt butter in another pan. Mix the NotStarch with
water till dissolved. Add
to butter and heat till thickened. Stir in the heavy cream, than
add the
cream mixture to the pureed broccoli. Heat through but be careful
not to
boil! A delicious side dish! Makes a good 10 servings, so you
might want to cut
everything in 1/2. Even the kids liked it!
I don't measure things when I
cook, so
I'm going to estimate quantities, if it doesn't come out just
the way you
like it, just adjust it!
