Black Bean and Veggie Soup

1/4 cup uncooked dried black beans
5 cups water
1 cube maggi Vegetarian Vegetable Bullion Cube
2 stalks celery -- chopped
1/2 cup onion -- chopped
1 small tomato -- chopped
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon crushed red pepper -- (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Rinse beans. Place in a good sized pot with water and bring to a boil.
Let boil for 10 minutes, then add the rest of the ingredients. Simmer
for 1-2 hours or until beans are tender. Add bullion cube at end of
cooking time add water as needed during cooking to keep volume at 3 1/2
to 4 cups.
To make this Sugar Busters style, you can add some chopped salt pork or
bacon or ham if you like. As it is, it's Somersize acceptable because
it's fat free and has no animal protein added. For either plan, you could
sliver a fat free, whole wheat tortilla and make this into a tortilla
soup:)
