2 bean salad

14 1/2 ounces green beans, canned
14 1/2 ounces wax beans, canned
1/4 cup finely chopped onion
1/4 cup finely chopped celery
3 tablespoons red wine vinegar
6 tablespoons olive oil
1 tablespoon dijon mustard
1 clove garlic -- finely minced
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon dried mint
8 cups shredded lettuce (optional)
Drain beans well and mix with
onion and celery. Combine the remining
ingredients in a blender and blend well. Pour over beans and
toss. Let
refrigerate 1 hour before serving -toss again just before serving.
Serve as is or or well chilled lettuce with additional dressing.
**Optional: you can also make
this 3 bean by adding 1 can organic black
soybeans -rinse very well and drain. This adds an additional
20g carbs to
the entire recipe)
