Dahma's Hot Chicken Salad

Recipe By: Dahma
Categories: Salads

2/3 cup mayonnaise
3/4 cup grated parmesan cheese -- fresh
2 teaspoons minced garlic -- in olive oil
Old bay seasoning -- to taste
6 ounces chicken -- white meat, canned
1 zucchini -- sliced
Butter (to saute the zucchini)

In a microwave save dish, mix together the mayo, garlic, Old Bay, and 2/3 C of the cheese (save rest for topping). Add the chicken and mix well. Top with the remaining cheese. Place in microwave on high for approximately 5 minutes. If not hot all the way through continue in 1.5 minute increments until hot and bubbly and slightly browned around the edges.

Saute the zucchini slices in butter until lightly browned on each side.

Place zucchini slices on plate and top with the hot chicken mixture.

This is really good and I'm thinking that since the taste reminds me a lot of chicken casseroles, I may make a chicken bake by layering the zucchini and maybe adding some pimento for color and topping with mozzerella cheese.
