Green Bell Pepper Dressing

15 Green Bell Peppers -- clean out seeds and
cut into large pieces
5 green onions -- (5-8) use entire onion
2 quarts mayonnaise
1 cups buttermilk -- (1 to 2)
Juice of 1/2 fresh lemon
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 Tablespoon GuarGum* (for thickening)
Run Green Bell Peppers and onion through blender till chopped
fine or grind as for relish. Put into VERY large bowl. Add
Mayonaise and mix well.
Add buttermilk and lemon juice, mix well again. Add spices and
GuarGum and mix well again. Pour into quart or pint jars put on
lids and refrigerate.
*Guar Gum is a natural thickener, it is used by the food industry
to thicken many of the foods that we eat. Ice cream and salad
dressings are just two that come to mind. It can be purchased at
Health Food Stores. The brand that I use is SOURCE NATURALS. It
is not really expensive,the bottle that I am using now was only
$11.98 for a 16 oz jar of the powder. The lable says it is suitable
for vegetarins and Hypoallergenic. It contains NO yeast, dairy,corn,
soy,or wheat. No sugar, starch, salt, preservatives or artificial
color, flavor or fragrance.
Makes approximately 1 gallon. Share this with family and friends.
It is great as a dip also
