Chicken Salad

6 eggs -- hard boiled
4 slices bacon
2 medium sized (bnls/sknls) chicken breasts -- boneless, skinless,
cubed
small, fried til lightly browned in olive oil
mayonnaise -- to taste
mustard -- to taste
I mixed the egg yolks, crumbled
cooked bacon, chicken, mayo and mustard
until it was the consistancy I wanted, then added the egg whites
(chopped
pretty small). I'm really bad at estimating, but I'd say I used
at LEAST
1/2 cup mayo (I could be way off on that...maybe as much as a
cup?) and then
2 or more tablespoons mustard (because hubby loves mustard).
I didn't add salt or pepper to
it because I'm trying to keep my salt intake
reasonably low, but hubby added both to his later. I hope someone
else
likes this as much as we do! :-)
We've easily gotten 4-5 good
sized servings out of this.
