Almond Cheese Salad

2 large leaves lettuce
1 radish -- thinly sliced and chopped small
1/3 cucumber -- thinly sliced and chopped small
7 each almonds, chopped
2 slices gouda cheese -- American also works, cubed
Olive oil
1/2 tablespoon mayonnaise
1 teaspoon mustard
Salt and pepper to taste
Mix all the ingredients. This
is my favorite salad. The almond adds
crunch. I eat it almost everyday.
