4 each chicken breast halves
without skin -- skinless, boneless
1/2 cup atkins bake mix
3/4 cup water
2 tablespoons tabasco sauce
1 teaspoon creole seasoning -- to taste
1 large egg -- beaten slightly
Heat oil for deep frying to 400
Cut breasts into desired nugget size.
Mix bake mix, tabasco, seasoning and egg -then add water to make
batter(you want it to stick to the meat -but not run off fast).
Put all chicken into batter and
toss well with your hands. Fry (in batches
if necessary) until golden brown -usually about 5 minutes.
Drain and serve with desired sauce - sour cream, mustard mixed
sweetener for a 'honey mustard' flavor, low carb BBQ sauce, etc.
This is also great sliced on
romaine lettuce for a Cajun Caesar salad. This
does make quite a bit of chicken nuggets -up to 40 depending
on the desired size.
