Chicken Adobo

4 Chicken drumsticks
4 Chicken thighs
4 cloves garlic -- minced
1 tablespoon black peppercorn -- roughly crushed
2 tablespoons soy sauce
1/2 cup vinegar
1/2 cup water
2 tablespoons vegetable oil
2 cloves
A pinch of oregano
Salt to taste
1. Heat the oil and brown all chicken pieces. Stir in the garlic and
peppercorn and stir until garlic is golden.
2. Add water and soya sauce, srirring together and bring to boil.
3. Add the vinegar. DO NOT STIR. Let it boil some more for approx 3
minutes before you can stir.
4. Add the rest of the spices. Let it boil and simmer, stirring every
now and then, until all liquid is gone.
Goes well with a cup of green salad. Can also substitute chicken with
pork.
