Chicken Fajita Melt

1 chicken breast -- cut into slices
a blend of chili powder --
cumin, salt and pepper -about 2tsp total mixed
1/2 lime -- juiced
*Season chicken breast slices and set aside to marinate
2 teaspoons olive oil
1/2 green bell pepper -- cut into strips
1/2 small white onion -- cut into chunks
1 ounce monterey jack cheese -- or mexican cheese,
sliced thinly (1 to 2)
additional salt and pepper to taste
Heat oil in a non-stick skillet. Saute chicken 3 minutes, then
add the peppers and onions and saute until they just start to
wilt (about another 3-4 minutes). Make sure the chicken is cooked
through. Transfer to a plate and place cheese over the top.
Microwave for 30 seconds or until cheese melts.
