Chicken and Feta

Take two skinless, boneless chicken breasts and fillet
them into thin pieces suitable for rolling. On each,
sprinkle salt and fresh-ground pepper, then lay strips
of fresh basil over them. Cover with feta cheese and a
small slice of tomato, then roll it so the cheese, tomato
and basil are on the inside of the roll. Pierce it with a
skewer to hold it in place (if you use bamboo skewers,
soak them in water for 20 minutes first so they don't burn),
and broil for app. 20 min.,turning once.
