Crust:
3/4 cup pecans
1 stick butter
3/4 cup atkins bake mix -- or soy flour
Cheese layer:
8 ounces cream cheese
1 1/2 cups artificial sweetener -- splenda
1 cup heavy cream -- whipped
Pudding Layer:
2 boxes instant sugar free pudding - any flavor
1 cup heavy cream
2 cups water
Topping:
1 cup heavy cream -- whipped
Combine crust ingredients.
pat in bottom of a 9x13 pan and
bake 15 min. at 350' let cool.
Beat cheese layer ingredients
and pour over crust.
beat together pudding layer and
pour over cheese layer
top with whipped heavy cream,
sweetened to your taste and sprinkle with more
pecans. This is not low calorie, but low carb. Cut into 12 big
pieces, it is 10
carbs per piece, and know one will know it is sugar free. Great
for when you
need a special dessert.
