Chocolate Brownies

1/2 cup butter -- softened
2 eggs -- (separated for cake-like brownies see below)
1 ounce baking chocolate square
2 teaspoons chocolate extract
2 tablespoons water
2 tablespoons soy flour
1/4 cup chocolate Designer Protein Powder
1/2 cup chopped walnuts
8 packages artificial sweetener -- I used stevia
Preheat oven to 350 Cream butter
and stevia. Add eggs and beat. In separate bowl, mix the
flour, protein powder and the nuts. Melt chocolate with flavoring
and water.
Add chocolate mixture to eggs and beat in, add dry ingredients
in 2 or 3
divisions blending after each. Bake in small pan sprayed with
cooking spray. Bake about 15 mins or
until set...don't overbake!! Cool and cut into squares. ( get
about 10 good-sized ones).
Cake-like Brownies
Same as above, but separate eggs...Add yolks to butter and sweetener
mixture. Beat whites separately with a pinch of cream of tartar.
Fold
in egg whites after dry ingredients are added. Bake as above...
Butterscotch Brownies
Same as above but substitute chocolate extract with 2 tsp. of
DaVinci
or Log Cabin Lite (made with splenda) and use 1/4 c. of Designer
Protein
Powder, vanilla praline flavor. I also substituted almond flour
for the soy
flour. You can still use the 1 oz. chocolate, it makes them taste
richer.
These I frosted with cream cheese
and Log Cabin Lite pancake syrup and
sprinkled with toasted , chopped almonds. Very pretty. Cream
cheese
weighs in at about .8 carbs per oz., so you'd have to add that
as well as the
additional chopped nuts (almonds are 5.8 per oz. before being
chopped or ground).
