Cat's Pecan Crust

1 1/4 cups protein powder
2 teaspoons artificial sweetener -- splenda
*tsp cinnamon
*tsp nutmeg
1 teaspoon xanthan gum
1/2 teaspoon salt substitute
1/2 cup shortening -- Crisco
1 tablespoon shortening -- Crisco
4 tablespoons water -- very cold
*cup chopped pecans

Mix dry ingredients thoroughly.
Cut in the Crisco with a pastry cutter or two knives, as you would for regular pie crust.
(careful, cuz the protein powder is so light it has a tendency to 'pouf' on you!)
Add chopped pecans. Add water & mix thoroughly.
Press into pie plate & bake lightly @ 425 if using for pumpkin pie, until completely cooked if for mousse-type pie.
