Buttermilk Pecan Pie (Sugar Busters)

1 cup fructose
or 2 cups splenda granular
1/2 cup butter
4 large eggs
1 teaspoon vanilla extract
1/2 teaspoon maple extract (optional)
2 tablespoons whole wheat flour -- (if using splenda use 3T)
1 dash salt
1 cup buttermilk
1/2 cup pecans -- measure then chop

Preheat oven to 300f. Put the pecan pieces in the bottom of a 9" square non-stick cake pan. Cream butter with fructose or splenda until light and fluffy. Mix in vanilla and maple extracts and beat in eggs one at a time until well blended. Add flour and salt and beat well. Beat in buttermilk and pour gently into pan, doing your best not to disturb the pecans. Bake for approx 1 hour and 15 minutes or until it tests clean in the center. Serve slightly warmed.

Fructose nutritional info: 1/12 of pie: 226 calories; 13g fat; 28g carbs.

Splenda: 136 calories; 13g fat; 5g carbs

Ok -I made this last night with fructose and it's really, really good-but really, really sweet! I may cut that back to 3/4 cup! I have not tried it with Splenda yet, but it should work just fine. If you don't like pecans, or want to cut out a couple of grams of carbs, leave them out. This would also make an excellent plain custard - just bake in a custard dish instead (maybe individual ones?)
