1/2 cup TVP (textured vegetable
protein) 6 carbs -- 6 carbs??
2/3 cups ground plain pork rinds
4 tablespoons butter
2 stalks celery
1/4 cup green onion -- chopped
1/2 cup mushroom -- sliced
1 cup chicken broth
1/2 teaspoon sage
salt and pepper -- to taste
garlic -- to taste
Saute celery & onions in
butter until tender, add mushrooms, chicken broth and bring to
Add seasonings, TVP & pork rinds, mix thoroughly and let
sit until liquid is absorbed.
This makes 4 1/2 cup servings
NOTES : Carbs for TVP not included
in above total - adjust accordingly
In addition to above:
* lb pork sausage, crumbled and cooked
* cup chopped pecans
1 cup whole, raw cranberries (add to the veggie/broth mixture
OTHER STUFFING IDEAS
Anyone have an idea if the Atkins bread, because of it's "cornbread
consistency", would work in a stuffing? Maybe add
a little poultry seasoning, a pinch of cayenne and other spices?

I was thinking of trying to make stuffing with Kaycees "Pig
Blanket" bread. When I made it for my family my daughter
(the stuffinghater) said ewwwwwwwww this bread tastes like stuffing!!!!!
and BINGO a light bulb went off in my tiny little
head!!! I was thinking about adding a few onions and some celery
bread bake it and then toast it in slices and them
crumble, add some broth and some mushrooms then baking again.
