Strawberry Banana
Walnut Muffins

1 cup atkins bake mix
2 tablespoons protein powder -- whey
3 eggs
2 packages artificial sweetener
1 package Stevia
1 teaspoon Rum flavoring
1/2 small package strawberry/banana sugar free jello
1/4 cup chopped walnuts
3 tablespoons whipping cream
Seltzer water
Combine all ingredients except
seltzer water. Add only enough seltzer
water to make batter consistency of cake batter. Pour into greased
small
muffin tins. Makes 11-12 muffins. Bake 350 degree. Check for
donenesss at 9
minutes. Do not over bake! These are absolutley delicious, sweet
without any bitter taste!
