Pepperoni and Cheese

Ketogenics bread mix
1 Large package sliced pepperoni
12 ounces mozzarella cheese -- sliced
Prepare bread mix using the "Dough"
setting following the Pizza crust
directions on the box. After rising, punch down dough, reshape
ball and let rest for 5 minutes.
Divide dough into twelve equal
parts. Press each part out flat making
4" x 6" rectangles. Place a 3" x 3" slice
of mozarella on each rectangle.
Top with sliced pepperoni 9-12 slices per rectangle. Roll each
jellyroll style and pinch seam closed. Place seam side down on
non-stick cookie sheets. Place in 150 degree oven and let rise
for 15 minutes.
Remove from oven, and increase
temperature to 400 degrees. Bake 15-20
minutes at 400 degrees until deep golden brown. These freeze
also keep well in the fridge. I love them for breakfast or lunch!
