Fiber Muffins

1 cup wheat bran
1/2 cup oat bran
1 cup flax meal
1 cup water
2 teaspoons baking powder
1 teaspoon vanilla extract
1 teaspoon apple extract -- or flavor of choice
1/2 teaspoon ground cinnamon
2 each large eggs
6 packets sweetener
Preheat oven to 350f. Spray a muffin tin with cooking spray. Beat eggs
lightly and add remaining inrgedients. Mix well. Spoon into 10 prepared
muffin cups. Bake for approx 15 minutes or until the spring back when
pressed.

NOTES : Counts for apple extract not included in totals.
I know this carb count looks high, but there's a lot of fiber - 10g carbs and
5g fiber(subtractable kind) per muffin. I'm also thinking you could spread
this out on a cookie sheet and bake for an almost graham cracker like taste!
