Cracker Crackers

1/2 cup atkins bake mix
2 tablespoons butter -- cold
1 teaspoon mrs dash original
1/8 teaspoon kosher salt
1/2 cup cottage cheese
poppy seeds
kosher salt
Put baking mix, butter, 1/8 tsp kosher salt,and Mrs. Dash
in a food processor. Process to fine crumbs. Transfer to
small bowl. Add cottage cheese to processor, process until
smooth. Return flour mixture and process until ball forms.
Roll out between two sheets of plastic wrap. Roll until very
thin [1/8 inch]. Place on a baking sheet, while still in
plastic wrap. Chill in refrigerator for 1/2 hour. When cold,
cut into 2 inch squares. Place parchment paper on baking sheet.
Transfer cut dough onto parchment. Bake in 275 degree oven for
35 minutes. Turn off oven leave crackers in oven for additional
20-25 minutes. Cool on rack.
Variation: add 1/2 cup of shredded cheddar cheese to cottage cheese
for cheddar crackers, or add 2 tbsp of grated Romano and 1/4 tsp
of garlic powder to baking mix for Ceaser crackers
