Thick Chili Con Carne

3 tablespoons Olive Oil
1 pound extra lean ground beef(93% fat free)
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green bell pepper
11 ounces Tomato Juice -- I use the
individual size cans of tomato juice,
they are 5.5 oz each.
5 ounces Water -- can add more water if desired
1 teaspoon Cumin powder
1 1/2 teaspoon onion powder -- or granules
1 teaspoon garlic powder -- or granules
2 Tablespoons chili powder -- (2 to 4) to taste
1 can canned green chilies
Salt and Pepper to taste
Hot Sauce or Hot Chili Flakes if desired.
Saute olive oil, beef, onion, celery and green pepper
together till meat is completely cooked. Put on a lid
so the vegetables will steam while the meat is cooking.
Add tomato juice and water, lower temp, cover and let
simmer 3-5 minutes.
Add remaining ingredients and let simmer for 5 minutes.
Serve with cheese, sour cream or what ever suits your
fancy (within the diet)
