Mexican Lasagna

1 tablespoon olive oil
1 1/4 pounds chicken -- or ground turkey
1 package taco season mix
16 ounces Ortega smooth Taco sauce -- (1 jar)
1 cup chopped onions
1 cup green & red peppers
1 package low carb tortillas -- (10 count)
1 package 4 cheese mexican blend cheese -- shredded
4 ounces green chilies -- (optional) (1 can)
1 can black olives -- sliced (optional)

Preheat oven to 375. Place 1 tbsp of olive oil in skillet, brown ground
meat on medium heat 5 to 6 minutes or until meat is no longer pink.
Drain, reduce heat to low and add taco seasoning mix, peppers, onions and
chilies. Simmer 4-5 minutes or until vegetables are tender. Pour 1/2
cup taco sauce on bottom of lasagna pan. Take 5 low carb tortillas and
cover bottom of pan. Take meat mixture and layer over tortillas. Puor the
other 1/2 of taco sauce over tortillas. cover with 1/2 bag of the
shredded cheese. Make second layer with 5 more tortillas. Cover with
remainder of the meat and the other 1/2 of the cheese. Place sliced olives
on top of cheese. Bake for 15 to 20 minutes or until cheese is melted.
Serve hot. Makes 4-6 servings.
