Crock Pot Pork and Squash

3 lb pork roast -- (3 to 4)
2 cloves garlic -- sliced thin
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon thyme
1/4 cup water
3 medium zucchini -- sliced into 1î rounds
Using a sharp knife, stab thin
slits all over the roast and insert garlic
slivers into them. Mix the salt, pepper and thyme and rub into
the roast all
over. Place the water, then the roast into the crock pot. Turn
to high and
cover. Let cook 4 hours, then add the zucchini in. Let cook another
1-2 hours or until meat is fork
tender and zucchini is cooked.
