Baked Italian Sausage

2 pounds Italian sausage -- cut
in 4" pieces
2 large onions
2 green peppers
Prick sausage with fork and place
in a roaster. Cover with foil and
bake at 350° F for 20 minutes, or until sausage begins to
shrink and give
off juices. Cut onions in half and slice halves crosswise.
Stem, seed and slice green peppers. Put all vegetables over sausage.
Cover and bake about 25 minutes, Until veggies are "tender".
Remove cover and bake 5 to 10 minutes more or until brown.
