Ingredients:
|
3 lb ground beef or chuck
1 c (1 med) green bell pepper, chopped (5.5)
1 c (1 med) onion, chopped (7.5)
3 X-Lg Eggs (0)
Seasonings to taste (see below)(0)
1 - 15 oz can tomato sauce, divided in 1/2 (28)
1 - 3 oz bag pork rinds, finely crushed (about 1 1/2 c) (0)
1/4 c Parmesan cheese (like Kraft) (1)
1/2 c Atkin's Bake Mix (if needed) (6)

How To Prepare:

Mix ingredients thoroughly in large bowl (with hands) in order given using half of the tomato sauce. (You'll only need to use the Atkin's Bake mix if the mixture is still kinda "wet", which will help hold it together.)
Place in baking pan (at least 9" x 13"), in three equally divided portions, shaping each into loaves. Dividing the mixture helps it bake faster and more evenly. Pour other half of tomato sauce over the three loaves and bake for 1 to 1 1/2 hours until top begins to brown and the center is done. Note: You can also use low carb ketchup or bbq sauce in addition to the tomato sauce on the top.
Seasoning: The spices I like to use are Salt and Pepper (a must) to taste, Garlic salt or powder (couple or three good pinches), Italian seasoning (1/4 tsp), celery seed (1/4 tsp), and Seasoning salt (1/4 tsp or so.)
Hint for quick & easy servings later:
Let the meatloaf cool, and divide into servings. Put each serving into sandwich baggie with a little (1 Tbsp) of the drippings. On the outside of each bag, write the number of carbs. Heat in the mircrowave. Remember, leftovers are always just as good if not better
