Description: I am glad to be low carbing again! I long for some beans and thought about how much I love Popeye's red beans. Of course, a big NO NO on any low carb diet.


So I fidgeted around to see if I could come up with a suitable alternative using the beloved Eden's black soy beans.


Here it is. Please let me know if it works for you or if you have suggestions on how to improve this. I don't know how to calculate the carbs, but perhaps someone else does.


Popeye's Red Beans
1/4 C bacon grease
1/2 vidalia onion
1/4 red pepper
1/4 yellow pepper
2 cans organic soy black beans, drained of liquid
1/4 tsp cumin
1/4 tsp garlic powder
1/8 C liquid smoke
2 C chicken broth
salt and pepper to taste


Drain beans. In pot heat bacon grease on medium heat. Add onions and peppers and begin to saute. Throw in beans. Pour in chicken stock. Add cumin, garlic powder, and liquid smoke.
Reduce heat to low and simmer for about an hour.


After an hour or so, check and stir ingredients. Taste test. Add salt and pepper. Continue cooking about another 1/2 hour. You want the beans to be soft, and this takes some time with the organic soy beans.


Remove about 3/4 of the beans from the pan and put them through a food processor or blender to break them down to a smooth consistency. It is your preference on how much to process and how smooth to make the beans. Add them back into the pot with the remaining 1/4 of the beans. Continue to cook about 15 more minutes.


Add more stock if they become too thick. Test the spices and seasonings. I had to add salt.


When serving I added a dash of red hot, it was perfect!!
