Can top these with a number of different flavorings...I use a TBS of SF Strawberry preserves.
SF Orange Marmalade
SF Grape jelly
SF Maple syrup
SF Raspberry jelly
**A TBS or two of SF jelly heated in the mic for 10-15 sec will be plenty for the whole dish.
1/4 cup Ricotta Cheese, 1/4 cup Cottage Cheese, 1 Egg, 3 TBS Whole Wheat Flour, a pinch of shredded coconut, 1 TBS Fat-Free lemon pudding mix (dry),1-2 TBS water (to thin out the batter to pancake consistency)
How To Prepare:
Mix all ingredients in a bowl and then transfer to a mini food processor. Pulse until the mixture is the consistency of batter. Melt a tsp of butter in a pan. Cook on low till golden, sprinkle with additional coconut, flip when bubbles start to appear. Cook till done.
