Description: My mom used to make this chocolate pie when i was little. Since going LC I decided to try and tweak it, and it turned out awesome! Try it, you'll be in heaven!
Ingredients: For the crust- 2 Cups almond flour, 3 egg yolks, 2 tbsp softened butter, 2 tbsp heavy cream, 1/4 tsp salt, 1/2 tsp vanilla... For the pie filling- 2 1oz squares Baker's unsweetened chocolate, 7 tbsp Truvia, 3 tbsp corn starch, 1/2 tsp salt, 3 cups heavy cream, 3 egg yolks slightly beaten, 1tbsp butter, 1 1/2 tsp vanilla.
How To Prepare: Mix together all crust ingredients until well incorperated and press into 9" glassd pie plate. Bake at 350 degrees for about 20 minutes or until browned. Note: I have always added about 1/4 cup of vital wheat gluten to this crust and it wors great, but watch the crust because itll begin to puff up and you need to poke it with a tooth pic. If anyone tries this without adding the gluten let me know how it turns out, Also you can add some sweetener to it, i added a pack or two of truvia. You can also add cinnamon or other spices if making pumpkin pie or something else. For the Filling- Mix together in medium saucepan- Chocolate, cream, truvia, salt and corn starch. Heat over medium until boiling, stirring constantly. Boil 2 minutes. Add half of pudding mixture to beaten egg yolks, stir. Return to pot and boil 2 additional minutes. Remove from heat and stir in butter and vanilla. Pour into pir shell and let sit until cooler. Cover with plastic wrap and refridgerate several house or overnight until completely cold! Best taste and texture when completely cold from the fridge. Top with some home made whip cream and enjoy!
