About This Recipe
This is a tasty way to incorporate your veggies with your meat. It is simple and delicious and can be frozen.
2 medium zucchini
1/2 lb ground beef
1/4 cup onions, chopped
1 garlic cloves, minced
2/3 cup seasoned bread crumbs
1/3 cup milk
1 cup spaghetti sauce
1/2 cup cheddar cheese, shredded
Directions
Preheat oven to 325 degrees.
Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4" shell, and place pulp on a cutting board.
Chop pulp and set aside.
In a skillet, brown ground beef, onion and garlic. Drain grease.
Add pulp, bread crumbs and milk.
Spoon into zucchini shells. Place in a greased 2 quart baking dish. Top with spaghetti sauce and cheese.
Cover and bake for 30 minutes.
