Peanut butter cookies using a small amount of Almond flour. Adapted from the no flour recipe given to me by a family friend years ago.
Cookies are pretty tender due to very little flour but they will melt in your mouth.
I do not like really sweet cookies but if you want them sweeter add more Splenda and figure in the carb counts. Enjoy.
1/4 C Almond Flour 1 C Peanut Butter 1 C Splenda Baking Sugar Substitue 1 Egg 1/4 tsp Salt 1/2 tsp Baking Soda 1/2 tsp Vanilla
How To Prepare:
Cream sugar substitue with egg and vanilla, add Peanut butter and beat until smooth by hand. Add dry ingredients and stir until mixed. May add small amount of water if it is too thick for you. Roll into balls and place on cookie sheet--use fork to make cookies a uniform thickness-about 3/8 inch.. Bake at 325 degrees for about 5-6 minutes. Lower heat and bake longer if you have problems with the bottoms getting too brown.
Number of Servings:
About 30 cookies (small=ball size is about 1 1/4 inch in diameter)
Carbs per serving - include all nutritional information if known:
About 3grams carbs per cookie. Whole receipe is about 1853 cal 80 carbs and 18 grams fiber. Aproximate only.
