Description: I combined two low-carb recipes that I had found and came up w/this quiche for dinner. DH and DD LOVED it! I liked it, as well. I'm sorry, but I have NO idea what the carbs would be. I didn't have the time to do that part. It made four GENEROUS servings.
Ingredients: 1 (10 oz) pkg frozen, chopped Spinach – microwaved w/liquid squeezed out
2 Tbs. olive oil and 2 Tbs. unsalted butter
1 medium (or half large) onion, chopped
2 cloves minced garlic
¾ to 1 cup heavy cream
6 eggs
½ to ¾ cup grated Parmesan/Romano cheese
1 cup shredded mild cheddar
½ cup shredded Monterey Jack or shredded cheese for pizza
Salt and pepper to taste
Dash nutmeg
How To Prepare: Preheat oven to 350° Heat butter and oil in medium pan. Sautee onion and garlic until onions start to brown. Add drained spinach. Heat everything together for 10 minutes.

In bowl, whisk the heavy cream, eggs and cheeses. Season w/salt and pepper and add nutmeg. Stir in the spinach mixture. If it looks very thick, add a bit more cream. Pour into greased 8-inch square glass pan. Bake in preheated 350° oven for 40 minutes until the top is slightly brown. Pull out of oven and let sit for 15 minutes before serving.
Number of Servings: 4 very large servings
Preparation Time: 15 minutes
Effort (Easy, Average, Difficult): Easy

Positive aspects of the product (pros): Set up really nice, looked tasty too (great flavors!)
Cons: Almost too much spinach for me, but probably not too much for spinach lovers!

Made this out of necessity! Smile Didn't want to run to store or stand at stove cooking for any length of time. This was super easy and tasted really good! My husband even had thirds. I was really expecting him to turn his nose up at it!

So, I was pleasantly surprised at him and at how this simple recipe turned out really well and hit the spot!

Positive aspects of the product (pros): I think it tastes great and very easy to make!
Cons: I don't see any negativity at all! I've made it at least 8 times!

I love this quiche! It's hard not to eat alot. I figured it was about 667 calories a serving as written - I hope I figured that correctly. Everyone that ate it loved it - even the kids!
