filmpnk Velvet French Onion Soup (w/ Mozzarella "crouton")

Simple + quick french onion soup has tons of flavor in less time.
Can beef broth
1 tsp Heavy Cream (optional)
1/8 yellow onion, sliced
3 cloves garlic, smashed and sliced lengthwise
1/4 c. shredded FRESH mozzarella
1 tsp fresh chives (chopped green onion stalks)
Ground Pepper from a mill
How To Prepare:
Turn toaster oven on to 400'
Put butter in a saute' pan + heat until bubbly, add onions and garlic + gently cook until translucent and soft. Do not "carmelize" the onions
Transfer to a small pot, add in broth, cream, s+p to taste (I like a little xtra pepper in this recipe), blend, and turn heat to low and cook.
Meanwhile, on top of the toaster oven tray, take a piece of foil and spray w/ cooking spray, then "pile" the mozzarella to a 4x4 round. Place in toaster oven and cook until EDGES ONLY are browned.
Remove soup from burner, pour into a mug, then take tongs or what have you and drop the mozarella into the soup.
Allow soup to 'rest' for about 5 mins then top w/ fresh chives.
